Coconut Curry Chicken with Broccoli

Bold curry, creamy coconut, tender-crisp broccoli, juicy chicken, hearty brown rice — this dinner will be a repeat for sure! It’s packed with protein, fiber and whole grains, and doesn’t miss a beat in the flavor department either. Yep, we will be making this again.

This dish literally took 10 minutes to make. Good thing too, because my husband was  starving, but we wanted more than thrown-together burritos (though those also work quite well…and often…for us!)

As I was eating this, I also realized it was naturally gluten and dairy free! All my GF/DF friends really need to try this one out.

*All measurements are approximate. I threw this meal together pretty fast, and didn’t bother to measure anything. The amounts given are just a guess, but you can season this to your liking! 

Coconut Curry Chicken with Broccoli

Ingredients: 
  • 2 chicken breasts, cubed
  • 1 Tbsp olive oil
  • 1 can full fat coconut milk
  • 1/2 can tomato paste
  • 1-2 tsp green curry paste
  • 1-2 tsp curry powder
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/2 head of broccoli, or however much you like
  • Cooked brown rice
Directions:
  1. Heat olive oil in a skillet over medium-high heat. Add cubed chicken, turning once the first side has reached that beautiful golden brown color. You’ll know it’s ready to turn over when it releases easily from the pan. This will give you the juiciest chicken.
  2. When chicken is browned and cooked through, add the coconut milk, tomato paste, curry paste, curry powder, cumin and red pepper flakes. Mix well and bring to a boil.
  3. Add the broccoli for the last 2-4 minutes of cooking. Serve over brown rice (we had those precooked, microwavable packs of brown rice from Costco — so handy!)
  4. Enjoy!

P.S. Since my hubby isn’t a fan of broccoli, I just served his up before adding the broccoli to my portion for the last couple minutes.
