I am a big fan of starting the day off right. Nothing does that better than an omelet chock full of amazing veggies, good protein, and a little bit of yummy cheese. I’ve never been one to take a long time on breakfast dishes. I (and my very hungry morning tummy!) do not have the patience to wait around for 30 minutes while something cooks. I usually stick to cereal and milk, but have felt the need to branch out lately. Fortunately, this omelet takes about 5 minutes to make — an amount of time that I find do-able =)
Omelets are highly customizable to whatever veggies you prefer, but my favorite version is below:
- Onions, chopped
- Green pepper, chopped
- Tomatoes, chopped
- Cheddar Cheese
- 2 eggs
Start by sauteing the onions in a little bit of butter. I’ve found that onions cooked in butter are not only tastier than those sauteed in oil, but seem to be more gentle on those who have sensitivities to onions.
When the onions are soft, add the peppers and tomatoes.
Fill the rest of the pan with spinach. I added about 4 handfuls =)
The spinach will wilt pretty quickly.
Crack the 2 eggs over the veggies, and mix away!
Top with a sprinkling of cheese and fold everything over so the residual heat melts the cheese.
Serve with toast.
OMG this is amazing!! I have eaten it almost every day for the past several weeks =)
